All about sweet summer corn / paired with corn-based cocktail spirit

Canapés – Corn fritter horseradish crème fraiche with smoked paddle fish roe

                        Roasted Pepper Tamale with farmer's cheese

 

Course 1 - Raw Fish Dish – chili-cured snapper, charred corn, fermented peppers, cotija

Course 2 - Confit Chicken, Sweetcorn and Smoked Chicken Raviolo

Course 3 -Smoked Pork Belly, cornmeal crusted, peach, corn maque choux

Course 4 - Sweet Cornbread, corn pudding, blueberry dip 'n’ dots
